I like it to cook at a cooler temp. I feel like it gets a better crust and holds moisture better. I’m sure side by side it would be tough to tell the diff. Probably semantics. Literally thousands of threads on this ... :BDHorse:

Some of my splits are portions of 150 year old fence posts, which were originally just iron bark tree trunks, split to fence post size. We all know how old farmers used to treat their fence posts to preserve them .......... should I or should I not use these old posts in my smoker?

Good wood is important. Hate to see you wreck your meat w bad wood. I’m guessing it’s hard to come by and expensive where you are? Maybe use charcoal and add wood chunks for smoke? Ideally, you’ll use just wood but availability and $$ matter.

You are asking for trouble, in my opinion. Clean, properly seasoned (usually 1-2 years old) wood is pretty critical.

Yeah you’ve confirmed my thoughts. I’ll be using charcoal & some chunks of good wood.
I’ll save the fence post wood for bonfires.

And It’s smoking time. Pork Collarbut with a wet rub containing Dijon mustard, fresh minced parsley,fresh minced rosemary, dried orange peel, pepper, garlic powder, salt. Spritzing with Apple cider vinegar & water. Image

One end reads 210, the other 240, the digital in the middle read 230, so the average of both door thermometers will be pretty close. The digital is now in the butt. Currently at 133 internal.

4.5 hrs in & its at 157F internal. Do I wrap when it’s at the stall?

I normally wrap butts in foil around the 160-165 temp range or when it gets a good color.

I wrapped in foil @ 160. It’s now at 195. Isn’t that the temperature it’s meant to be finished at? It’s had 6.5 hours.

Round about there Andy. Does the probe go in super easy? Like stabbing warm butter? You should rest it wrapped too and it will go up 5 to 10 degrees.

Yep, went in easy. I accidentally pierced the bottom of the foil & lost most of my juices. I saved some. It’s resting now.

As an out-take, I think next time I will leave it on a bit longer, maybe to just over 200F. Some bits were tender, others were not so tender. But the flavour was out of this world!! The unabsorbed juices, I put in a pan & reduced as a sauce. Sensational to say the least.
The smoker however, performed flawlessly. Temperature control was so easy, almost to the degree. For this I have this forums calculators & members to thank.
