I was gifted this little beauty. About 300 gallon internal (need to remeasure). Stainless steel inside and out. I was thinking vertical with shallow water pan. The heater mounted below with chip box/hot plate for smoke. My question to start is how to calculate the size heaters to achieve easy steady heat. In my work, I know that it is better to have your heat profile to only use your heaters at 40% - 70% for longevity as well as stability.
