Water pan in GF mini smoker

Smoker Clones are your own version of a commercially available Smoker. Examples are Stumps, Jambo, Backwoods, or any other you want to try to copy.

Water pan in GF mini smoker

I was looking at the plans this weekend and was wondering how would I use a water pan with it? Does everyone just put a pan on the racks or other method?

I don't use a water pan in my fridge, doesn't need it, & I'm not going to use one in the mini GF, I'm sure Frank would have put one in if it needed it. I've read about people having problems with reaching & maintaining temps. :beer:

You're right Squiggle, there's no reason to put a water pan in a smoker of any kind. When the water is cold it acts like an heat sync, then when hot the evaporating water goes everywhere but in the meat. Meat is a muscle heat causes it to contract, this is why you should let a steak rest after cooking it, so it will relax. Then there's the problem of adding water and rusting the cooker.

I use a water pan in my vertical but mostly as a heat sink/diffuser and grease drippings collector. I have been known to pour left over marinades or apple juice or the occasional beer in there as well. Does it make a difference? None really that I can tell one way or the other.


If it's tourist season, how come I can't shoot 'em?
