New years Brisket

Were doing a brisket stuffed baked potato at work Tuesday afternoon and with the bad weather coming I decided to smoke the brisket ahead of time and just reheat the chopped meat the day of. This started out as a 16# full packer. Trimmed down to 12#. I trimmed the fat pretty thin on the outside but I left the fat under the flat mostly intact only peeling it back a few inches. I injected it with a garlic and herb injection and then salt and peppered it.

Turned out pretty good and the wife had to snip a corner off to "test" it....good flavor and good smoke ring. Should make for some good eats! It was probe tender over 90% of it....still had one area that was not quiet butter soft but chopping it up will cure that.

Cooled and chopped...........yes, wrapped in foil at 165*

That’s a good lookin slab of beef bro. I don’t eat much beef but when I do, that’s what I’m talkin about.
