wine barrel

Post by robbynz » February 26th, 2011, 10:22 pm

Here's a wine barrel I've decided to turn into cold smoker.
I've some pork belly in a brine at the moment ready to cold smoke it in the next few days.

I think I need to put a flue on it, does any know what size should be?

I don't really know to much about cold smoking any help will be greatly appreciated.

Thats really slick. I saw one that a guy made into a drum smoker, it was really cool as well.

Yes you need a flu for sure. Is there a plug on the side of the barrel? I have seen some guys us it for the stack.

If not, do you have a way to drill about a 2" hole in the top of the barrel?

Just remember, you want thin blue smoke. Almost to the point where its hard to see, so long as you can smell it, its good. Heavy smoke will make your stuff bitter.

For a test you could find something about a 1/2" dia and stick it between the lid and the barrel. Thats gonna let the smoke out and should get you closer to the thin blue smoke.

Good luck and please keep us posted.

bacon 1.jpg
I havent got any racks made up yet so the old cotton twine did the trick.
Any ideas what I could do about that?
bacon2.jpg
I added a bit of lump charcoal with the apple tree chips and it seemed to be a good combo.
bacon4.jpg
Im happy with the finished product.
I ended up vacuum packing the bacon ready to take on the next hunting trip.

I was checking out your bacon again and couldn't help but notice that you have good taste in knives. I have the same blade and its my favorite hands down.

I don't know much about those kind of smoke generators, but I think it is a Ventura Brand.
