Good Morning, Afternoon and Evening Crew!

Lots going on and in between it all I have been working little by little on the smoker and it is beginning to take shape. The interior is lined and shelve supports in. The top and two sides are tacked into place, the three doors are tacked together and two have one skin on them. And one of the shelve frames is tacked together, wanted to ensure a fit. So it's goign well, I can tell you this Mini is not Mini on the work involved!

Couple Notes:
- As you know I added 6" to the overall, then I added two inches to the shelve spacing and then added shelve guides in the middle, with the spacing it allows me to slide a rack in every space, even between the guides, it has worked out very well.
- I have also been fighting the sheet metal, it all has a crown to it, I bought sheets sized so I could cut certain panels out and if you lay all the edges flat the center will be raised up. I first found this out on the interior and had to use a jack to install the guides and force the panel back into position, this worked great. The sides I have to position, tack the tops in and then with a tube clampes to the edges move down the panel 6 inches at a time tacking as I go to get it to lay flat. Maybe this is due to how the steel is drawn at the mill.
- Most items in the picture are just tacked in place, I tack and tack, then grind and repair as needed depending on the fit.
- The weight is adding up, my driveway is inclined and moving the smoker you have to be committed!

Good Morning, Afternoon and Evening,

Well I have been whittleing away at the Mini, sometimes it's more like trying to carve a toothpick from a giant redwood with a butter knife! I pushed hard over the weekend after I realized my smoker work area was blocking my lawn mower! Finished welding all the sheetmetal and hung the doors, got the thermometers cut in the door, using two - one top and one bottom then the control thermocouple will be in the middle. I also roughed in a funnel for loading the charcoal, figured if I didn't I would burn the gasgets first time! Again thanks for the support. :biggrillin:

Well Gang the time is near!!! :biggrillin:

Sunday we officially unplugged the Welder for the Mini +6" HD project! :beer:
Latches are all on and tested, ready to paint and door seals, then fire it up this coming weekend, maybe May 12th or 13th. Filed a Jeep Wrangler key to work as a Slam Latch Lock! Next pictures will be the test fire!

Well Crew - Another update with food pictures! And yes it's all good.

I seasoned it mid last week, with a full load of Kingsford Hickory it ran for 18 hours, a little longer than I anticipated. The temperatures are very stable and very easy to control. I put a mark in the sweet spot and in the cooking I did yesterday few adjustment needed, like plus minus and 1/8", very stable! I also made a stick to measure the charcoal depth, it helps as I really don't want to stick my face over the opening!

So I was wondering what to do if it rained but I figured it out because rain was not going to stop me!!

Now the food, charged the smoker around 540AM, and put the 8lb. Boston Butt on about an hour later. Then in the afternoon we added three racks of ribs and 4 lbs of mild sausage. We like to just take the 1 lb. mild sausage and smoke until they hit 160 Deg. We cut them in 1/4" slices and use in sandwiches, pizza, omlets, etc. The ribs I smoke with a dry rub for 3 to 4 hours then wrap in halves for another hour or so. The butt was bone in and I blend all the crust and left over fat together with a little more of the season (dry rub) and a little Franks Hot Sause, good stuff!
