Heater meter worked great. Set it to 225 and left it running all night. Was on rails.Image

Loving this thing. It's currently burning a bag of Royal oak bricks that were left out in the rain since January. Little fluxuation but not enough to matter.

Yeah I set the Heater Meter to 280. At this point I can hold temp very well. That old wet charcoal had allot more fluctuation, but even it held within 15 degrees.

The only time mine gets that hot is when im not paying attention. Most of my cooks shoot for 225-250 range.

How did they turn out?

I cooked the turkey at 280. It turned out great. I pulled it when the white meat hit 160. Everyone said it was delicious.

Chuck roast I cooked at 225 till it stalled at 140 then wrapped it in butcher paper and bumped temp to 250 and cooked it to 180. Put it in fridge and reheated to 150. It was very good. I will push internal temp to 190-200 next time to see if it will get more tender.ImageImage

No door opens in this graph. Door Opens do fluctuate the temp and it does take some time for it to settle back down. The yellow spike in this graph delineates a door open detection. As you can see it drops and then over shoots slightly. I think I can adjust the maximum fan speed to minimize the over shooting, but I will have to test. I am also thinking of changing out the pit probe. I am currently running this probe:

I am thinking about going to something different that will permanently mount in the cooking chamber.
