couple questions
i am looking at buying a meat thermometer. is the maverick redi check wireless smoker thermometer any good?
also, i need wood. put a add on craigslist, but no bites. i saw a landscaper cutting down a small dead tree that he thought was oak, how can i verify? thanks.
one more.....how do i clean out my rs? hose it out?

The maverick is an excellent choice

I agree Maverick is a good choice. With regards to wood, not sure where you are located, but check with local landscape and tree trimming services. Not sure about RS? Was that a typo?

i called a guy off craigslist here in south florida. he said he has a oak tree that needs to come down because its threatening his pump house, and cars. he said I can take as much as Id like. he said the tree is green. I asked him how long it takes for green oak to dry. he wasnt really sure. I will be using this wood in my 250 gall reverse smoker, (stick burner)...

whats a good dry time for cooking in that fire box in florida? thanks

I would be careful cleaning out your cooker. If you were to use water to clean it, might need to reseason it. I was stay away from water if at all possible. Is there a specific reason you feel it needs to be cleaned. As far as wood trying, I would give it a good 6 months once cut and split. You want to stay away from "green" wood to ensure you get a clean burn.

Maverick 732 is the way I went and couldnt be happier, I had the cheaper 20 dollar probes for a a two years and went to the maverick......

I also agree the Maverick ET-732 is a great 2 probe thermometer with a remote monitor. I like to wait 3-4 months on the bigger pieces of oak for it to dry. But the smaller pieces not so long, you can try to burn it and if you can get the thin blue smoke I say go for it. Try different size pieces one size at a time, so you will know what is ready and when. As for testing it I would have to say pass, if I didn't know because in Florida there are several types of oak and it is easy to come by.

I wait 3 to 4 months to dry out wood and I am pretty picky about it. As for cleaning out the CC, most of don't do much more than scrape the chunks out which is all I do with mine. I use an 8" drywall taping knife. Scrape the top and bottom of each rack, the sides to the best of my ability and the baffle plate while it is cooling down from the last cook.
If you have to weld something in there, might I recommend easy-off and a garden hose followed by a re-seasoning? On my Chuterdoo, I clean it about every other cook with greased lightning and a garden hose. My neighbors love me for that.
