smoking with hotel pans

I have been considering the idea of using 2 inch food pans (hotel pans) with wire racks to to smoke meat on. Idea being, 1 less mess, 2 - prevents flavors from other meats impacting a different type of meat when cooking multiple types and 3- ease of moving from smoker to serving area.

has anyone done this? what are thoughts on it? I dont think it would hurt the smoke too much since the sides and top would still definately receive full smoke.

I've smoked a lot of different meats in pans and it turns out great.

Keep the meat elevated in the pan if you can. I've used those cheap cooling racks. I get them at Rest Depot but I'm sure everyone sells them. A lower lipped pan is better as well.


If it's tourist season, how come I can't shoot 'em?

yeah my plan is to get the following items to use:

that should get it up high enough off pan and allow good air flow

thats what i was thinking too. by time i put a rack in them. The meat will sit above the pan instead of in it. allowing smoke to hit everything properly except the bottom
