Thanks Dink! I'm gonna try that with my next birds and see if I can keep the fingers out of the recipe. Your brine looked really good too- what gave it that dark color?

I use 1/2 c molasses, 1 c sugar, 1 c salt, 1/2 c Frank's hot sauce, 1 c worcestershire sauce, 1 Tbs black pepper, 1 Tbs thyme, 1 Tbs rosemary and 2 tsp cayenne pepper. this is what I use when I'm smoking poultry. I bring all of this to a boil in a gallon of water, let it cool, refrigerate over night then mix with 1 more gallon of water

I never brine less than 12 hours, no more than 24 hours, depending on the size of the poultry, then rinse and apply a thin coat of my carolina sauce and then my Dink's Chicks & Butt rub.

Hey guys I've got a 50 lb bird. Yes I said 50. Guy wants it cooked whole. I'm figuring 15 min a lb. am I right or close. Never done a turkey before just chickens.

I have smoke a few, never 50 lbs. but if I did I would spatchcock it. I like the method used on amazingribs.com. They give a time per lb chart.

Yes that's what I want to do I thought this would cook more evenly and maybe a little quicker than whole bird. I've also never brine what's the thoughts on this yes. No.
